1 pound beef sirloin or ribeye
2 tbsp vegetable oil
1 large Onion
1 large green bell pepper
8 oz sliced mushrooms
Salt
pepper
4 piece hoagie rolls
8 slice provolone cheese
In a large skillet, heat 1 tablespoon of the vegetable oil over medium-high heat. Add the beef and cook, stirring frequently, until browned and cooked through, for about 5-6 minutes. Remove the beef from the skillet and set aside.
In the same skillet, heat the remaining tablespoon of vegetable oil over medium heat. Add the onion and cook, stirring occasionally, until soft and lightly browned, for about 5-6 minutes.
Add the green bell pepper, mushrooms, salt, and pepper, and cook until the vegetables are softened, for about 5-6 more minutes.
Add the cooked beef back to the skillet and toss everything together.
Divide the mixture into four portions, and stack each on a hoagie roll. Top each portion with 2 slices of provolone cheese.
Broil the sandwiches in the oven until the cheese is melted and bubbly, for about 2-3 minutes.
Serve hot and enjoy!
