Greek-Style Kofta with Tzatziki and Roasted Olives
Juicy Greek-style beef and pork kofta served with cool tzatziki and warm roasted mixed olives. The kofta can be baked in the oven or grilled over charcoal.
Ingredients
Kofta
400 g ground beef
400 g ground pork
1 piece red onion
3 clove Garlic
1 handful fresh parsley
1 handful fresh cilantro
1 tsp ground cumin
1 tsp paprika
1 tsp dried oregano
Salt
Black Pepper
1 tbsp Olive Oil
1 bunch water
Tzatziki
500 g Greek yogurt
1 piece cucumber
2 clove Garlic
1 handful fresh dill
1 handful fresh mint
lemon juice
Salt
Black Pepper
Roasted Olives
300 g mixed olives

Combine the ground beef, ground pork, finely chopped red onion, minced garlic, parsley, cilantro, cumin, paprika, oregano, salt, black pepper, and olive oil. Refrigerate for 30–60 minutes.

Soak the wooden skewers in water for 10 minutes. Shape the mixture into elongated kofta and thread them onto the skewers.

Bake the kofta in a preheated oven at 200°C using the fan setting until cooked through, taking care not to overcook them so they remain juicy. Finish under the grill for 1–2 minutes to brown them, or grill over charcoal if available.

For the tzatziki, combine the Greek yogurt, grated cucumber, minced garlic, dill, mint, lemon juice, salt, and black pepper. Refrigerate until chilled.

Toss the olives with the seasonings of your choice and bake at 180°C for 15–20 minutes, until warmed through.

Serve the kofta with the tzatziki and roasted olives.
